Canned Culture

The first cannery in the Steveston area was called the Phoenix Cannery. It was opened around 1890 by Marshal English. It was aptly named the Phoenix, because it burned down in 1895, and then a second one was built in its place, similar to the legend. Legend says that a bird called a phoenix lived for 500 years only to burn itself to ashes on a pyre an arise youthfully from the ashes to live in another period. The canning label used after the second cannery was built in 1897 had cooking instructions printed in both French and English before printing in both languages was required by the government. The label did not tell you what kind of salmon the can contained!
