Our culinary team has prepared a wide variety of plated dinner menus for every taste and occasion. We are happy to create a custom menu tailored towards your event. Our goal is to offer a dining experience as exceptional as the Aquarium itself. Please select from our menu choice or discuss your selection with one of our Event Planners. Our planning professionals strive to meet each individual needs.

Please note menus are seasonal and subject to change. Please confirm exact menu items with your Event Planner. Plated dinners are priced for a minimum of 50 guests or a surcharge may apply.

Plated Dinners

Dinner includes one appetizer, one entrée and one dessert with artisan rolls, freshly brewed organic and fair trade coffee and selection of teas.

*Note that the appetizer and dessert selection must be the same for all guests.
Additional entrée choice is possible (maximum 3 entrees, which includes a vegetarian entrée.)  
Choice of entrées on night of event are available at $80.00 per person, please ask your event planner as restrictions do apply.

Appetizers

Salads

  • Classic Caesar salad parmesan crisp, brioche croutons, shaved parmesan, classic house made dressing
  • Poached pear endive salad; candied pecans, caramelized pear vinaigrette (GF)
  • Seasonal vegetable salad, feta cheese, arugula (GF)
  • Artisan green salad, dried cherries, seeds, honey lemon vinaigrette (GF)

Soups

  • Potato leek with pickled vegetables (GF)
  • Cold beet consommé with dill cream (GF)
  • Roasted squash and miso (GF)
  • Seasonal vegetable velouté (GF)
  • Sherry glazed mushroom (GF)

Appetizers – Enhancements - additional cost – per person $12.00

  • Alberta beef Carpaccio, pickled shallots, crispy shallots, Ponzu glaze (GF)
  • Yarrow Meadows duck Confit, walnut puree, braised kale, sherry gastrique, grainy Dijon mustard (GF)
  • Ocean Wise Lightly cured salmon tartar, golden beets, olive oil, shallots (GF)
  • Ocean Wise Vegetable ash coasted ling cod terrine, pickled vegetables, hand cut potato chips (GF)

OR

  • Ocean Wise Caramelized scallops, house made ‘bacon’, sweet pea puree(GF) additional cost – per person $18.00

Entrée

From the Range - $65.00 per entrée

  • Seared beef tenderloin, Confit garlic mashed potatoes, caramelized onions, wilted spinach, cinzano jus (GF)
  • Slow cooked venison tenderloin, roasted vegetable tart, espresso demi
     
  • Braised beef short ribs, carrot jalapeno puree, roasted fingerling potatoes shallot and red pepper slaw (GF) 
  • Rack of lamb, roasted tree fruit risotto, minted jus (GF)                                                             
                                                                                                                                        

From the Farm - $57.00 per entree

  • Roasted organic chicken breast, leg meat Blanquette, potato gnocchi, natural jus            
          
  • Twice cooked Berkshire pork belly and tenderloin, sautéed cabbage grainy mustard, spaetzli and sauce                         

From the Sea - $65.00 per entree

  • Pan seared ling cod, fried crab dumplings, Bok Choy, chili yuzu broth
                                         
  • Ginger poached salmon, crispy rice, Wok fried beans shiitake mushroom vinaigrette (GF)
     
  • Roasted halibut, melted leeks, roasted squash, verjus gelee

Dessert

  • Classic vanilla crème Brule with brandy snap and fresh fruit
     
  • Brown butter apple cake with salted caramel ice cream
     
  • Milk chocolate mousse with hazelnut base
     
  • Classic lemon meringue tart with berry compote
     
  • Mango custard, macerated coconut, coconut foam, yuzu gelee (GF)

OR

  • Baked dark chocolate ganache, espresso gelato (GF)- additional cost – per person $8.00
